304 stainless steel (~18% chromium / ~8% nickel) does not react with fats, salt or food acids at usual kitchen temperatures. It is a material approved for food contact in the EU (Reg. 1935/2004).
There is literature (e.g. Environmental Science & Technology, 2023) documenting the release of micro- and nanoplastics from PP containers heated in the microwave. Orders of magnitude vary between studies. If you avoid heated plastic, steel is one of the alternatives.
Stainless steel can be recycled indefinitely without loss of properties (per World Steel Association). In domestic use, these containers last years, not weeks — the silicone lid can be replaced separately.
