In a regular pan you reach 160–200 °C, in the oven 220–230 °C, in deeper frying 175–190 °C. Oils degrade when you exceed the smoke point. Avocado „stays in range” for almost any cooking method.
Monounsaturated fat profile similar to extra virgin olive oil. Oleic acid is a heat-stable fat and is consumed as part of the Mediterranean diet. EFSA recognises the role of replacing saturated fats with monounsaturated ones in maintaining normal cholesterol levels.
Beta-carotene, lutein and lycopene from salad are fat-soluble — their absorption increases when consumed with a source of fat. A classic study (Unlu, Journal of Nutrition, 2005) observed significant increases using avocado oil. Don't expect exact multipliers on your plate at home.
